Ever want to spice up your breakfast routine in a simple way? TACOS! Who doesn't love tacos at any time of day??
The best thing about tacos is that you can mix and match ingredients, based on what you like and what your dietary needs are. Here is what I did:
Prep Time: 10 minutes
INGREDIENTS
2 sprouted or cassava/almond flour tortillas - I love Ezekial or Siete Foods!
2 pasture-raised or organic eggs
chopped tomatoes
chopped spinach
chopped mushrooms
chopped onions
extra virgin olive oil
avocado
salt + pepper
ghee (optional)
DIRECTIONS
In a medium skillet, add 1tbsp of olive oil to coat it. Turn skillet on to a medium heat and crack your two eggs and slowly stir them so they become scrambled. Add in your chopped veggies, salt and pepper for flavor, and continue to stir until fully cooked. Add 1 tsp of ghee if you want a more buttery texture.
In another small skillet on a low heat, place your tortillas one by one to get them warm and crispy (optional). Keep and eye out so they don't burn (or set the alarm off!).
Once both are done, simply remove from skillets and place egg batter into tortillas. Add more spice for flavor, and top with salsa and avocado. Enjoy!
