I know what you are thinking.... waffles and ice cream?! But I am telling you guys ---- I grew up eating these (good old' fashioned Eggo's and all), probably every night, and now can enjoy them again and even in a healthier way!!!! I'm so excited.
They are perfect for that mid-day or evening sweet treat, full of allll the goodness. They are SO easy to make too!
INGREDIENTS
A box of Birch Benders paleo waffles (you can get the pancake/waffle mix and make them homemade, but I love the frozen ones to make it easy!)
Dairy-free or organic ice cream - I love Nada Moo, Three Twins or Coconut Bliss!
DIRECTIONS
Toast the waffles to desired texture (or make them using the mix by following the packaging directions) and put some ice cream in the middle for a perfect sandwich!
That's literally it.....
