sunny-side up eggs + GF naan


Eggs are easily one of my favorite breakfast options (if you haven't noticed already!). They are just such a great way to get protein into your diet and start your day out with a filling breakfast! Breakfast is the most important meal of the day, you know ;)


This meal is a bunch of different things, but of course, pick and choose what you like or mix and match items! You can change out the meat (or remove it), choose a different fruit, etc. Make it what you like! The biggest thing is just to make sure you get healthy fat, fiber, protein and greens on your plate!


Prep Time: 10 minutes


INGREDIENTS

  • extra-virgin olive oil

  • pasture-raised or organic eggs

  • fresh spinach

  • orange or mandarin slices

  • nitrate/nitrite free bacon

  • sliced avocado

  • homemade naan bread - you can find the recipe here


DIRECTIONS

  • In a skillet, on a low heat, add 1tbsp olive oil then add your bacon. Let your bacon cook slowly, flipping every minute or so. Remove when fully cooked to your liking.

  • Using the same skillet (and the bacon grease), crack the eggs. Let them cook until they get crispy, for a sunny-side up look. Top with salt + pepper.

  • Pair on your plate with fresh spinach, your fruit of choice, some avocado slices and the naan bread for a complete meal! Mix and match as desired.

  • Enjoy!
