chicken + broccoli stir fry

Simple and easy recipes on repeat over here in the Bernardi household. While we have been stocking up on non-perishables and frozen foods during this COVID-19, we also have made sure to have tons of fresh fruits + veggies + proteins in the house. There's nothing like it! We made a chicken + broccoli stir fry the other night and it was delish! Fresh margs on the side too ;) Give this one a try next time you need a simple idea at home!



INGREDIENTS:

  • 1-2 cups organic wild rice

  • 1-2 breasts organic chicken (we love our Butcher Box subscription!)

  • 1 cup broccoli

  • 1 cup carrots

  • 1 cup green beans

  • 1 avocado

  • 1 bell pepper

  • 2 tablespoons coconut aminos (great sub for soy sauce)

  • 2 tablespoons olive oil

  • hemp seeds (optional)

  • cashews or raw nuts (optional)


*For a vegan dish, simply remove animal protein and sub for tofu or add more rice/vegetables/raw nuts or seeds!


DIRECTIONS:

  • Cook rice with instructions on package.

  • Saute all veggies (to desired serving) in a pan over medium heat until crispy.

  • Add chicken when fully cooked and mix well.

  • Portion out the rice and top with chicken/stirfry + seasonings/sauces of choice and fresh avocado. Add additional toppings (hemp seeds, raw cashews, etc) for added protein and healthy fats, if desired.

  • Enjoy!


**Ps - you can also make this dish in your instant pot for a faster meal!! Super easy!
