Simple and easy recipes on repeat over here in the Bernardi household. While we have been stocking up on non-perishables and frozen foods during this COVID-19, we also have made sure to have tons of fresh fruits + veggies + proteins in the house. There's nothing like it! We made a chicken + broccoli stir fry the other night and it was delish! Fresh margs on the side too ;) Give this one a try next time you need a simple idea at home!
1-2 cups organic wild rice
1-2 breasts organic chicken (we love our Butcher Box subscription!)
1 cup broccoli
1 cup carrots
1 cup green beans
1 bell pepper
2 tablespoons coconut aminos (great sub for soy sauce)
2 tablespoons olive oil
hemp seeds (optional)
cashews or raw nuts (optional)
*For a vegan dish, simply remove animal protein and sub for tofu or add more rice/vegetables/raw nuts or seeds!
Cook rice with instructions on package.
Saute all veggies (to desired serving) in a pan over medium heat until crispy.
Add chicken when fully cooked and mix well.
Portion out the rice and top with chicken/stirfry + seasonings/sauces of choice and fresh avocado. Add additional toppings (hemp seeds, raw cashews, etc) for added protein and healthy fats, if desired.
**Ps - you can also make this dish in your instant pot for a faster meal!! Super easy!
