cinnamon chocolate chip cookies


More dessert recipes....shocking, I know. Can you believe it!?

But for real - chocolate chip cookies are always a good idea. Before I knew anything about health, I used to come home from school and my mom would have a whole warm batch made on the table (not anything healthy, we're talking Nestle' Toll House action) and I swear myself and my brothers would devour them in t-5 minutes. I think my little brother would stuff his face with 3 at a time... (they're hard to resist okay!?) No, I don't have diabetes, but gosh darn it I probably should.

Thank God I lived through that tragic time in my life to tell you how you can make chocolate chip cookies that are actually healthy! All gluten & dairy-free too! I could still probably eat 5 at a time, but I've learned self-control.....sorta. I call it quits at 4.

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Serving Size: 10-12 cookies

Ingredients:

Directions:

  • Preheat oven to 350 degrees

  • Line a non-stick cookie sheet with wax or parchment paper

  • Whisk together all ingredients in a medium-sized bowl except for the chocolate chips

  • Once an even texture, add in the chocolate chips and distribute evenly

  • Using hands or a tablespoon, form dough into small portions and place onto the cookie sheet (shape them as you want to, as they will not spread or rise like with regular flour)

  • Bake for 12-15 minutes until golden brown (toothpick test!!)

  • Allow to cool for about 10 minutes

  • Enjoy!!
