More dessert recipes....shocking, I know. Can you believe it!?
But for real - chocolate chip cookies are always a good idea. Before I knew anything about health, I used to come home from school and my mom would have a whole warm batch made on the table (not anything healthy, we're talking Nestle' Toll House action) and I swear myself and my brothers would devour them in t-5 minutes. I think my little brother would stuff his face with 3 at a time... (they're hard to resist okay!?) No, I don't have diabetes, but gosh darn it I probably should.
Thank God I lived through that tragic time in my life to tell you how you can make chocolate chip cookies that are actually healthy! All gluten & dairy-free too! I could still probably eat 5 at a time, but I've learned self-control.....sorta. I call it quits at 4.
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Serving Size: 10-12 cookies
Ingredients:
1/3 cup coconut flour
1/4 cup melted coconut oil
1/4 cup organic maple syrup
1/4 teaspoon salt
1 teaspoon vanilla extract
cinnamon
1/3 cup Enjoy Life chocolate chips
Directions:
Preheat oven to 350 degrees
Line a non-stick cookie sheet with wax or parchment paper
Whisk together all ingredients in a medium-sized bowl except for the chocolate chips
Once an even texture, add in the chocolate chips and distribute evenly
Using hands or a tablespoon, form dough into small portions and place onto the cookie sheet (shape them as you want to, as they will not spread or rise like with regular flour)
Bake for 12-15 minutes until golden brown (toothpick test!!)
Allow to cool for about 10 minutes
