lemon garlic salmon


For all of the non meat-eating folks out there, this one is for you! I love a fresh, wild salmon dinner whenever I can get it! My boyfriend and I (well, more-so him....he is the handler of the main meal ingredients) made an amazing seasoned salmon meal recently that I had to share!

Key things with salmon: you want wild-caught, NOT farm-raised because farm-raised is susceptible to more contaminants and lower levels of Omega 3's (which are good for you, and you need to be sure to incorporate these into your diet!!!) .

Not living on the coast can be a challenge to find fresh, wild salmon, so it's a rare occurrence that I do eat it for this reason. However, I do try to add it in when I can, either from a restaurant or simply putting in a little extra work to shop for it because of all its amazing health benefits.

I recently re-discovered the Dekalb Farmers Market, where they have a TON of fresh fish and pasture-raised meats. I will most definitely be buying my fish from there from now on!!

Prep Time: 10 minutes

Cook Time: 35-45 minutes

Total Time: about 55 minutes

Serving Size: Usually 1 filet per person

Ingredients:

  • 1 wild salmon filet

  • 1 lemon

  • salt

  • pepper

  • extra virgin olive oil

  • garlic (optional)

  • dill-weed (optional)

Directions:

  • Take the filet(s) and cover them in extra virgin olive oil until fully covered

  • Sprinkle on the salt, pepper, garlic and dill-weed for further spice and flavor

  • Cut the lemon up into small pieces and place 2-3 slices on top of the filet(s)

  • If cooking in the oven, preheat to about 400 degrees, and place salmon in a greased pan in the middle of the oven and bake for about 35-45 minutes (may need longer depending on size of filet)

  • If cooking on the grill, place flat on top of the rack and cook (covered) for about 35-45 minutes

***We added sweet potato fries (recipe coming soon) and then some sauteed brussels sprouts, onion and bacon bits cooked in coconut oil on the side of our meal (I love brussels sprouts if you haven't noticed!)
