vietnamese steak + rice noodle bowl



This meal has easily become one.of.my.favorites. Originally, I learned of the meal from Garnish & Gather, a local and organic meal prep company that I use from time to time and since then I have re-created it in SO many ways!


I used grass-fed steak in this recipe, but you can easily sub out the meat to any that you like (or even take it out completely or use tofu!).


Prep Time: 20 minutes

INGREDIENTS

  • 1lb protein of choice (chicken, steak, tofu, sausage, etc).

  • chopped cucumber

  • chopped carrot

  • chopped onion

  • chopped avocado

  • chopped tomato

  • 1 tbsp hemp seeds

  • 1 tbsp pumpkin seeds

  • extra-virgin olive oil


DIRECTIONS

  • Cook the protein of choice thoroughly (either on a grill, or on a medium heat in a skillet with some olive oil). Should be tender.

  • For the noodles - follow the instructions on the back: should be to boil a pot of water and immerse the noodles in the water for 15-20 minutes until soft. Set side until protein is done.

  • *Optional - place the cooked noodles in a skillet and saute the noodles in some coconut aminos, salt, pepper and ghee, to add some extra flavor.

  • Once protein and noodles are finished, in a large bowl, place the noodles and all toppings and protein in, mixing until fully blended. Add desired spices, pumpkin seeds, hemp seeds and avocado to top it off.

  • Enjoy!
