easy pasta salad!!

I don't know why but to me lunch is one of the hardest meals to come up with - usually it’s leftovers or a salad or sandwich, but it’s for some reason always strangely stressful. Can you relate? Well, if you need an idea, try this one out - it’s super simple and delicious!




INGREDIENTS:

  • leftover Banza chickpea pasta

  • leftover Butcher Box bbq chicken thighs

  • chopped tomatoes

  • chopped avocado

  • chopped bell pepper

  • 1-2 tbsp olive oil (I always use it as a dressing!)

  • salt + pepper

  • hemp seeds (pumpkin seeds are great too!)


Don’t overthink your meals! Just pack together some healthy fats, fibrous veggies and lean proteins and you’re set. Enjoy!
