peanut butter CBD cookies


Spiced up the cookie game by adding in some Charlotte's Web CBD oil, and #winwin at that. These are full of just enough sweetness to satisfy your sweet tooth but without all of the fillers and additives!

I won’t lie, I was a little skeptical of CBD at first when it started becoming a “thing” - but I overanalyze everything so I am probably not the best resource.... BUT lately, after doing some more research, I have started taking it more routinely and have definitely seen some benefits! There are many different ways to take/use it (oils, tinctures, capsules, powders, etc) but it is known mostly for the *possibility* of helping to relieve pain, improve bone health, reduce anxiety, control acne, or improve sleep. All of these things with which I have seen some improvement in!

Either take it daily with an oil or capsule, or just put it into your dessert and you won’t even taste it!

Prep Time: 10 minutes

Bake Time: 14-16 minutes

Serving Size: 10-12 cookies

INGREDIENTS

  • 1 pasture-raised egg

  • 1 tsp vanilla extract

  • 1/4 cup honey (I like Wedderspoon the best!)

  • 3/4 cup crunchy peanut butter (Georgia Grinders is my favorite!)

  • 2 tbsp coconut sugar

  • 1 serving of CBD oil

  • 3/4 cup almond flour

  • 1 tablespoon chia seeds

  • 1/4 tsp sea salt

  • 1/4 tsp nutmeg

  • 1/4 tsp cinnamon

  • 1/4 tsp baking soda

DIRECTIONS

  1. Preheat oven to 325 degrees F.

  2. Whisk together egg, vanilla extract and honey. Add in peanut butter and mix thoroughly. Add in all other ingredients and continue to mix thoroughly.

  3. Using a cookie scoop or two spoons, divide dough into a dozen cookies on parchment paper covered baking sheet.

  4. To make lines on the cookie, rinse a fork under water and then press gently down on dough. Continue rinsing fork for each cookie so it doesn't stick to the dough.

  5. Bake for 14-16 minutes until golden brown and crunchy.

  6. Remove and let cool. Enjoy!
