chocolate peanut butter banana bites


Uhmmmm just reading the title of these makes me drool!! I think I have found the easiest and most amazing dessert ever. Not only do you get the natural sweetness and vitamins and minerals from a banana, but you also get the healthy fats and protein from the peanut butter and THEN it's dipped in chocolate?! It's as amazing as it sounds.

Serving Size: 12-16 bites

Total Time: 10 minutes

INGREDIENTS

  • 2-4 peeled organic bananas

  • Peanut butter (make sure it has no added oils or is one that is super salted! - I usually get Georgia Grinders or Trader Joes brand)

  • Enjoy life chocolate chips, or Hu Kitchen or Eating Evolved chocolate bars (just shoot for the highest cacao percentage that you can!)

  • Raw & unrefined coconut oil

DIRECTIONS

  • In a small bowl, melt 1 cup of chocolate chips with 1 tablespoon of coconut oil by placing in microwave for 30 seconds. You can do this over the stovetop as well. Mix around to prevent burning then heat for another 30 seconds if needed until fully melted.

  • Cut bananas into thin slices. Put a small scoop of peanut butter on one side of the banana and place another piece of banana on the other side to make a sandwich.

  • Dip the banana + PB sandwich in chocolate and place on cookie sheet with parchment paper (or directly on a plate!)

  • Store in freezer for 1 hour to harden.

  • Enjoy!!!
