no-bake vanilla coconut cookies

A little late to posting these but....#life. Let's be honest....there is nothing better than a cookie, but also one that doesn't require ANY baking.....am I right?? I was able to partner up with Ora Organic to make these delicious gluten-free, dairy-free, refined sugar-free and NO BAKE cookies using their AH-MAZING Vanilla Chai Protein Powder! You definitely need to try them out, but also try out Ora Organic and all of the products they offer. I take their probiotic + prebiotic capsules everyday and feel amazing! It's always important to prioritize your gut health + immune system at the same time that your prioritize your nutrition and physical exercise.

ANYWAYS, these are super easy to make and are a delicious sweet treat throughout the week or even as a shareable dessert for your family dinner party!

Serving Size: 12-14 cookies

Total Time: 20 minutes

INGREDIENTS

  • 1 cup raw peanut butter

  • 1 cup unsweetened shredded coconut

  • 8 pitted dates

  • 1 tablespoon organic maple syrup

  • 1 serving Ora Organic vanilla chai protein powder

  • 1 tablespoon ground chia seeds

  • 1 tablespoon vanilla extract

  • 1/2 cup semi-sweet dark chocolate chips or raw cacao nibs

DIRECTIONS

  • In a food processor, add in all ingredients except the chocolate chips and process until completely smooth

  • Add in the chocolate chips and continue to process until smooth

  • Use an ice cream scooper or your hands to form mix into small round balls. Repeat until all mix is used.

  • Store in fridge for about 30 minutes prior to eating, to allow them to firm up.

  • Enjoy!!! You won't be able to put them down!!
